Ingredients:

For the sauce:

olive oil - 4 cloves garlic, crushed
- 2 medium onions chopped
- 1 / 2 teaspoon freshly ground pepper
- 1 / 4 teaspoon chili flakes
- 2 large cans of peeled tomatoes (with basil, if possible)
- 1 / 2 cup red wine (120 ml)
- 1 / 2 cup freshly grated Parmesan
- 1 teaspoon salt
- 1 cup water (240 ml)
- 1 / 2 cup fresh basil chiffonade in

For meatballs, the meatballs:
- 500 g beef, veal, chicken, turkey or Pork chopped, or a mixture of various meats (I use double)
- 2 eggs
- 6 cloves garlic, crushed
- 1 / 2 cup finely crumbled bread or 2 slices of bread full
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 1 / 2 cup freshly grated Parmesan
- 1 / 2 cup milk
- 1 cup flour (140 g) in a bowl
- 1 / 2 cup olive oil
- 3 cloves garlic, crushed
- 1 can of tomato paste (180 g)

- 500 of ribs (I do not use it every time)

Method:

The meatballs:
Pour the meat in a large container. Add the beaten eggs, 6 cloves garlic, bread, salt, pepper, Parmesan and milk. Mix everything by hand, then shape balls about 4 cm in diameter, with wet hands first. Roll meatballs in flour.

Heat oil in a pan with 3 cloves of garlic. When garlic is golden brown, set aside (I do not care), and cook the meatballs over medium heat, turning occasionally. Once they slip over the fork when you try to bite, they are ready. We do not want to cook them completely at this point. When all the meatballs are ready, cook the ribs in place over medium heat until well browned. Remove meat. Heat oil in a skillet with 4 cloves of garlic, onions, pepper and hot pepper. Cook until browned. Add the tomatoes, wine, salt and Parmesan cheese, then tomato paste, water, and cook over medium heat. Lastly, add the meatballs. Bring to boil, cover and simmer 2 hours.

Adjust seasoning and add the basil and cook 15 minutes more.

Serve with spaghetti al dente, and freshly grated Parmesan.

Espresso Mousse - White Chocolate



Ingredients for 4 cups espresso
