Ingredients:
- 1 / 4 cup of popcorn kernels, or 4 cups of popcorn
- 3 tbsp brown sugar
- 1 / 3 cup maple syrup
- 1 tablespoon butter, 15

Preheat oven to 350 F or 180 C. Cover with 2 sheets of baking paper.
Roll dough on lightly floured surface to a depth of 4 to 6 mm, depending on size of cookies (cookies are great addition they are more fragile and require a dough a little thicker).
Transfer the shapes on the baking sheets. Bake for 8-12 minutes depending on thickness, or until cookies are lightly browned on edges.

Method:
Pour popcorn in a greased bowl. The corn kernels can be puffed in a microwave at maximum power, under glass. Remove the popcorn As, and continue to blow out the remaining seeds.
Combine sugar, syrup, butter and salt in a heavy bottomed medium saucepan. Bring to boiling, turning constantly with a wooden spatula. Continue boiling, without turning, until a drop of syrup soaked in cold water, hardens. Add pecans.
Pour over popcorn and mix as quickly as possible.
Cool before serving.
All-Star Sugar Cookies
Based on a recipe from Williams Sonoma
Ingredients:
- 230 g butter at room temperature
- 3 / 4 cup of sugar or 110 grams
- 3 egg yolks
- 1 half vanilla bean or 1 1 / 2 teaspoon vanilla flavoring
- 2 1 / 2 cups flour, or 350 g
- 1 teaspoon baking
- 1 pinch of salt

Method:
Beat butter and sugar with electric mixer until the mixture becomes light, about 4 minutes. Add egg yolks one at a time, beating well after each yellow. Cut the vanilla bean in half and remove seeds with tip of knife. Add to the mix.
Gather the flour, baking powder and salt in a bowl.
Add the above mixture, while sifting. Blend on low speed until flour is incorporated.
Divide dough into 4 equal parts, form balls, flatten into disks, wrap in plastic wrap and refrigerate overnight, up to 3 days.
Remove dough 10 minutes before cutting to the punch.
Preheat oven to 350 F or 180 C. Cover with 2 sheets of baking paper.
Roll dough on lightly floured surface to a depth of 4 to 6 mm, depending on size of cookies (cookies are great addition they are more fragile and require a dough a little thicker).
Transfer the shapes on the baking sheets. Bake for 8-12 minutes depending on thickness, or until cookies are lightly browned on edges.
Cool on a rack and decorate the same day or later. The sugar cookies will keep for 1 week in an airtight container.
Vegetable Chili, Corn Bread to Compl flour ects
Vegetarian Chili
Ingredients:
- 1 tablespoon olive oil
- 2 medium onions, chopped
dice - 3 stalks celery, diced
- 4 carrots, diced
- 1 green pepper, diced
- 6 cloves garlic, minced
- 4 small cans of diced tomatoes peeled
- 1 concentrated can of tomato sauce (170 g)
- 4 tbsp chili powder (2 for a sweet chili)
- 1.5 tbsp ground cumin
- 2 teaspoon oregano
- 1 tbsp salt
- 1 tablespoon sugar
- 1 / 2 cup of leaves
cilantro - 2 tbsp of corn meal, fine grain, or corn flour
- 2 small cans of black beans (organic and non-salted for me)
- 1 small can of corn (organic and non- savory)
- 1 or 2 beets, cooked
To serve:
- shredded cheddar
- sliced green onions

Method:
Pour first 5 ingredients in a pot, and cook over medium heat.
When it starts to caramelize slightly, add garlic and cook another few minutes.
Add tomatoes, tomato paste, sugar, seasonings and salt.
Mix corn flour in 2 or 3 tbsp water and pour into the pot with 4 cups of water.
Simmer over low heat 30 minutes, being careful to stir regularly and monitor the chili does not stick to the bottom of the pan.
Add beans, corn and beets, and simmer another fifteen minutes.
Serve with grated cheddar, chopped green onions, cilantro, or diced avocado. Serve with a corn bread or corn bread.
This dish can be prepared beforehand, especially as the chili is always better the next day
Corn Bread Flour Co mplète
Ingredients:
- 60 ml honey
- 320 ml of buttermilk, or the same amount of milk + 1.5 tbsp lemon juice or cider vinegar

- 1 packet yeast
- 1 / 2 teaspoon baking soda

:
Butter a flat square 20 cm square. Preheat oven to 200 C or 390 F.
In mixing bowl # 1:
Mix all dry ingredients (flour, baking powder, baking soda and salt).
In mixing bowl # 2:
Whisk the honey, egg, milk, slightly warmed and melted butter.
Pour into bowl # 1, and mix just until incorporation of flour, without insisting.
Pour batter into prepared pan and bake 20 minutes. Turn
soon as possible and cool on rack.
